Single-Tank vs Multi-Tank Rack Conveyor Dishwashers

Choosing between a single tank dishwasher and a multi-tank rack conveyor dishwasher starts with the workload your kitchen must clear during its busiest return period. Daily meal numbers provide context, but the more useful question is how many racks must be washed within the time available.

A single-tank model is worth considering when its verified capacity and cleaning performance meet that requirement. A multi-tank configuration deserves closer evaluation when the single-tank options being assessed fall short, or when additional treatment stages address a specific washing requirement. There is no universal racks-per-hour figure at which every operation must switch from one configuration to the other.

What Is the Difference Between Single-Tank and Multi-Tank Machines?

This comparison concerns rack conveyor equipment, where racks move through the machine. It does not compare a batch-loading undercounter dishwasher with a conveyor system.

A single-tank configuration has one main recirculating wash tank. Multi-tank equipment uses additional tanks for defined treatment stages, such as prewashing or recirculating rinsing, depending on the design. Ask the supplier to identify each tank and its function on the configuration drawing.

Process stages and tank count are different specifications. A fresh-water final rinse or a drying section should not automatically be counted as an additional wash tank. Likewise, a parameter table listing only one tank volume does not, by itself, establish the complete internal arrangement.

Calculate Your Peak Rack Demand

Record the tableware arriving during a representative busy service. Separate plates, bowls, glasses, trays and utensils, then convert each group into racks using the loading arrangement you actually intend to use. Round partial racks up where different items cannot reasonably share a load.

Required processing rate = total racks to be washed × 60 ÷ available washing time in minutes.

The following examples illustrate the calculation; they are not customer case studies or boundaries between single-tank and multi-tank equipment.

Illustrative workload

Available washing time

Required average processing rate

30 racks

30 minutes

60 racks/hour

60 racks

30 minutes

120 racks/hour

100 racks

30 minutes

200 racks/hour

For example, clearing 60 racks within 30 minutes requires an average of 120 racks per hour during that window. A candidate rated below that figure cannot cover the requirement on its published rating alone. A rating above it supports further assessment, but does not confirm the final selection.

Also check how racks arrive within the window. Sixty racks arriving gradually create a different queue from sixty racks arriving near the end. Allow for the actual return pattern, loading interruptions and possible rewashing when agreeing on operating margin. Do not assume a machine rated at exactly the calculated demand leaves spare capacity.

When Is a Single-Tank Dishwasher Worth Considering?

A single-tank machine belongs on the shortlist when it can process the required rack volume, achieve the specified cleaning result and fit the installation.

Consider a kitchen with a calculated demand of 120 racks per hour. If a proposed single-tank model has a published rating above that requirement, the next step is to assess its performance with the intended tableware and loading conditions. The calculation does not automatically justify moving to multi-tank equipment.

Review the complete working arrangement as well. An acceptable machine specification has limited value if staff cannot prepare racks quickly enough or if washed items block the outlet. Before increasing equipment capacity, identify whether the queue comes from washing, loading or unloading.

The reason to choose a single-tank configuration should be that it meets the documented requirement-not simply that the kitchen is described as small or medium-sized.

When Should You Evaluate a Multi-Tank Rack Conveyor Dishwasher?

A multi-tank option is worth comparing when the single-tank candidates cannot meet the required output under suitable washing conditions, or when a separately controlled treatment stage offers a relevant benefit.

For instance, a proposal that includes a dedicated prewash tank should explain how that stage handles the incoming load and how the complete machine performs at the quoted conveyor speed. Ask what changes in the washing process and what evidence supports the proposed result.

Use three questions to assess the additional configuration:

Does it meet a workload that the shortlisted alternatives cannot handle?

Does the added treatment stage address a documented cleaning requirement?

Can the installation and operating team support the proposed arrangement?

Avoid selecting a multi-tank machine solely because the operation serves many meals per day. Equally, do not assume additional tanks automatically guarantee cleaner results, lower water use or reduced running costs. Compare those outcomes using specifications and testing for the actual models offered.

Compare Performance Under the Same Conditions

A useful quotation comparison needs more than a racks-per-hour headline. Ask each supplier to state the rack size, operating speed, tableware arrangement and conditions behind the quoted output.

Where performance is central to the purchase, agree on a representative load and acceptance criteria before testing. Record how many racks are processed, the elapsed time and whether items require rewashing. Keep the load and preparation method comparable across the alternatives.

For installation and operating requirements, compare:

The full layout, including inlet and outlet tables, operator access and service clearance.

Electrical supply, water connections, drainage and applicable ventilation requirements.

Water and energy figures stated on a comparable basis.

Routine cleaning tasks and access to tanks, filters and spray components.

Connected electrical power is not the same as measured energy consumption during service. Request operating data before estimating running costs from a specification sheet.

Applying the Comparison to OUGER Equipment

Our S250 single-tank dishwasher has a listed washing capacity of 200 baskets per hour, accommodates 500 × 500 mm racks, and measures 1500 × 800 × 1500 mm. These specifications show why a single-tank machine should not automatically be treated as a low-throughput option.

Use these figures as a starting point when assessing your requirements. The quoted configuration and capacity basis should be confirmed for your project, and the machine dimensions should be considered separately from the space needed for the complete dishroom installation.

If you are also considering our S250-D, ask us to confirm its tank layout and drying specification. A drying section alone does not indicate a multi-tank washing configuration.

For a recommendation, send us your peak rack calculation, tableware dimensions and loading photographs, available washing time, dishroom layout, and site utilities. Include your required drying outcome so we can assess a suitable configuration. Request that the quotation clearly states the recommended equipment and the assumptions used for selection.

Frequently Asked Questions

1. Can I reuse my existing 500 × 500 mm racks?

Nominal size alone does not confirm compatibility. Provide the rack's external dimensions, base structure and photographs so the supplier can check its suitability for the transport mechanism. A sample may be needed before confirming reuse.

2. Can an existing single-tank machine be converted into a multi-tank system?

Do not assume that additional tanks or modules can be retrofitted. Feasibility depends on the machine design, controls, connections and available space. Supply the model identification and installation details for a machine-specific assessment before budgeting for a conversion.

3. Can I retain my existing inlet and outlet tables?

Provide their dimensions, working heights, connection details and flow direction. Ask the supplier to show any retained tables on the proposed installation drawing so interface changes can be identified before delivery.

4. What should be included in the purchase acceptance criteria?

Specify the representative tableware and soil condition, loading method, preparation procedure, required output and acceptable cleaning result. Include drying criteria when relevant, and agree on how rewashes and interruptions will be recorded. These details make the acceptance process more useful than checking the model name or rated capacity alone.
